Our Story

At Piecewise Coffee, we believe coffee is more than just a drink—it’s a bridge that brings people together. Since its start in 2019, Piecewise Coffee has evolved from a charming local coffee shop into a growing hub for community, connections, and creativity.

In 2022, brothers Jacob and Zach Kirby purchased the original Cayce location with a vision: to create a space where life happens—where businesses are born, friendships flourish, and stories begin. For them, Piecewise isn’t just about coffee; it’s about making where we are what we want it to be.

The Meaning Behind Piecewise

Piecewise is a term from calculus—a function that connects unrelated data points to form something cohesive. Originally named by the first owners (an aerospace scientist, no less), it perfectly reflects what we strive to do: create common ground among uncommon people.

Everything at Piecewise Coffee is intentionally local–from the coffee beans to the baked goods sourced from a baker just down the block. As locals who live, work, and invest in this community, the Kirby brothers are passionate about supporting local businesses and fellow entrepreneurs who share their commitment to quality and craftsmanship.

  • We’re proud to serve Methodical Coffee, Greenville-based local coffee roasters known for sourcing exceptional beans and roasting them with care. Together, we co-created an exclusive Piecewise Blend—a smooth, balanced roast you can’t find anywhere else. This collaboration reflects our shared commitment to crafting coffee experiences that are as intentional as they are delicious, ensuring every sip tells a local story

  • While JJ’s Place Bakery may not have a traditional storefront, their baked goods have become a staple here at Piecewise. From buttery pastries to indulgent sweets, JJ’s delivers quality and care with every treat—straight from their ovens to our shelves. By partnering with pop-ups like JJ’s, we’re able to uplift talented local bakers and bring fresh, handmade goods to our community.

  • What started with a barista behind the Piecewise counter grew into a creative collaboration we’re incredibly proud of. Former barista and now co-owner of EEK! Creative, Katherine Frehse, has played a vital role in shaping the Piecewise brand. From logos and printed materials to our website and marketing design, Katherine and her team bring the creativity and care that makes our story stand out.

Something Small Catering is a unique, small service catering company in Columbia, SC that caters to your BIG events, but small guest lists.
